Mumbai Pav Bhaji
- 2 Medium Potatoes Chopped
- ½ Cup Green Peas Fresh
- ¾ Cup Cauliflower Chopped
- ½ Cup Carrots Chopped
- 1 Large Onions Chopped
- 1 Tablespoon Ginger-Garlic Paste
- 2 Medium Tomatoes Chopped
- ½ Cup Capsicum Chopped
- 1 ½ Teaspoon Red Chilli Powder
- ¼ Teaspoon Turmeric Powder
- 1 Teaspoon Cumin-Coriander Powder
- 1 Teaspoon Ready Made Pav Bhaji Masala Powder
- 1 Teaspoon lemon juice
- Salt As Per Taste
- 2 Tablespoon Oil
- 2 Tablespoon Butter
- Butter For Serving
- 2 Tablespoon Coriander Leaves Finely Chopped
- 8 Pav Buns
How to Make
First Take all the vegetables and rinse them under running water and cut them separately.
Then take a pressure cooker and transfer all the chopped potato, carrot, cauliflower and green peas with ½ cup water and salt as per taste.
After adding all the vegetables cover the pressure cooker and cook over medium flame for 3-4 whistles. After 3-4 whistles turn of the flame and let the pressure release naturally which will take approximately 5-7 minutes.
After the pressure is released take your boiled vegetables in a bowl and mash them using a potato masher or using a big spoon or spatula so that all the vegetable are nicely mashed leaving a thick texture.
Then take a pan and heat and add 2 tablespoons of oil and 2 tablespoons of butter together. Add Chopped onion and ginger garlic paste and sauté until onions turn translucent with light golden color.
After this add chopped tomato, capsicum and salt as per taste into it and sauté until tomatoes and capsicum turns soft.
Then add 1 and ½ teaspoon of red chili powder, 1 teaspoon of cumin coriander powder, 1./4 teaspoon of turmeric powder and 1 teaspoon of readymade pav bhaji masala powder into it and stir cook for a minute or two.
Add ¾ cup of water and mix well and cook for 3 minutes. After this add boiled and mashed vegetables and 1 teaspoon of lemon juice.
After this process mix and cook for 4-5 minutes and add salt if required and turn off the flame. Then garnish it with coriander leaves. Your bhaji is ready.
Then take a separate tava and keep it on medium flame. Add a tablespoon of butter into it. Then cut a bun into half and put it on the tava. Keep it on tava until brown color doesn’t appear in it. Do it with both the sides.
