    • 2 ½ cups grated fresh nariyal
    • 1 tablespoon ghee (Extra for greasing)
    • 1 ½ cups sugar
    • ½ cup milk
    • ¼ teaspoon elaichi powder (Cardamom powder)

    How to Make

    Procedure to make Ghee:

    1. Heat 2 ½ cups white butter in a deep non-stick pan.

    2. Once the butter melts, reduce heat to low and simmer, stirring frequently, so that it does not scorch.

    3. Cook for 30 minutes or till it turns light brown and the residue settles down. Remove from heat and cool. Strain into an air-tight jar and let it cool completely. Cover and store.

Procedure to make Green cardamom powder:

    1. Peel 100 grams green cardamoms and take out the seeds. Dry-roast the seeds till fragrant. Remove from heat, cool and grind into fine powder. Store in an air-tight jar, use as required.

    2.  Spread a little ghee throughout a tray in which the coconut barfi is to be made.

    3. Take the grated coconut, the sugar and cardamom powder in a thick bottomed non-stick pan. Cook this mixture on medium heat for 10 minutes. Don’t heat on full heat as it won’t cook the mixture and without cooking it will turn brown.

    4.  Add some ghee and then cook the mixture again till the water content lowers, i.e it dries. Make sure in this procedure the mixture leaves the sides of the pan.

    5. Pour this mixture in the tray in which ghee is applied previously and spread the mixture evenly. Settle it.

    6. Let this cool.

    7. After it cools down, cut it into pieces or barfis.

      It’s ready to serve!

Note: Use a special coconut grater to get fine, delicate curls of coconut which will make the barfi look good.

To make mango coconut barfi, add mango pulp to the coconut mixture. By doing the same you can make any mixture as desired!
