Khasta Kachori

  • 2 Cups Maida
  • 2 Teaspoon Salt To taste
  • 2 Tablespoon Ghee or Oil
  • 2 Tablespoon Curd
  • 1 Cup Besan
  • 1 Tablespoon Mint Leaves Chopped
  • 1 Tablespoon Coriander Chopped
  • 1/2 Teaspoon Chilli Powder
  • 1 Teaspoon Ginger-Garlic Paste
  • 1 Teaspoon Green Chilli Paste
  • 1/2 Teaspoon Haldi Powder
  • 1/2 Teaspoon Garam Masala
  • 1 Tablespoon lemon juice

How to Make

  1. First, mix maida with 1 teaspoon of salt, ghee, curd and make a stiff dough. Remember you can use water instead of curd to knead the dough if needed.
  2. Then take a saucepan and heat 2 tablespoon oil. When the oil is properly heated add ginger garlic paste, haldi powder, green chilli paste, pudina, coriander leaves, garam masala, salt to taste and besan into it and sauté everything well until water dries up and the mixture starts collecting together.
  3. After this turn off the flame and add lemon juice into the mixture and mix well. Then keep it aside to cool down.
  4. When the mixture turns cool, take the dough and make balls out of it.
  5. After this make each dough ball into round and then a flat disk. Remember the circle should be thick.
  6. Take a dough circle and pinch its edges, you can also wet the edges a bit so that it could be placed together. Then place some of the besan mixture in the center.
  7. After this cover the mixture and pinch the dough to seal. Make a proper smooth round of it and keep aside till all your dough balls are ready.
  8. Then take a pan and heat oil into it for frying the kachori. Take the raw kachori rolls and fry them until they turn light brown in colour.
  9. Your kachori's are ready, serve hot with chutney of your choice.
