Kaju ki Barifi

The extremely renowned sweet dish after ‘pedha’ comes ‘Kaju ki barfi’, broadly known as ‘Kaju katli’. How beautiful is that to make this sweet dish at home as you can make as much as desired! The name is enough for someone to drool over this dish, go and find a recipe, prepare it, eat it all, and then linger along the taste for really long!

  • 4 ⅙ cups cashew nut powder (Grinding the cashews finely)
  • 1 ⅓ cups sugar
  • 1 tablespoon milk
  • 2 tablespoons liquid glucose
  • 1 ½ tablespoons ghee
  • Edible silver foil.

How to Make

Cashew nut paste can also be made or prepared instead of cashew powder as follows :

  1. Let the cashew nuts soak in water for about an hour or more. After these are soaked properly, drain them in some cloth and grind to make a fine paste. Use very less amount of water. 

Procedure to make Ghee:

  1. Heat 2 ½ cups white butter in a deep non-stick pan. Once the butter melts, reduce heat to low and simmer, stirring frequently, so that it does not scorch. Cook for 30 minutes or till it turns light brown and the residue settles down. Remove from heat and cool. Strain into an air-tight jar and let it cool completely. Cover and store.

  2. Take a non-stick pan. Add sugar with 1 and 1/3 cups of water to it and then cook it. Let the sugar dissolve in the same.

  3. Add milk to this and collect the scum that has risen to the surface with a ladle and discard it.

  4. Cook the prepared sugar and milk mixture for about twelve minutes on medium heat or checking the consistency of the mixture till it becomes multi-string consistent.

  5. Stir the liquid glucose and add some ghee. Stir again.

  6. Remove the non-stick pan from heat. Add the cashew nut powder (Kaju powder) and stir again, continuously.

  7. Knead with soft hands to make dough out of it.

  8. Take some ghee, spread it lightly on an aluminium tray and spread the dough on the tray.

  9. Take butter paper and make the surface even with the help of the butter paper.

  10. Spread the edible silver foil over the surface and gently cut diamond shape or any other as required.

  11. The Kaju katli or Kaju ki barfi is ready to be served!

    Store it in an airtight container.
